Paneer Pav Bhaji
PAV BHAJI is like the most common go-to street food for us Indians whenever we are in the mood for something spicy and easy. This is probably something that is made in each and every Indian home across the globe. It's bunch of boiled and mashed veggies mixed with lots of butter and spices and eaten with bread called PAV (which is basically an unsweetened version of HAWAIIN BREAD ROLLS ). Like everyone else I also have my standard way of making regular PAV BHAJI but today I was in the mood for giving this dish a teeny tiny twist of my own. So if you want to eat something different over this weekend...then try this PANEER PAV BHAJI (somewhat a crossover between PANEER BHURJI & PAV BHAJI) Yes it's a great way to use up those extra veggies lying in your fridge and bring on a new twist to your same old Pav-Bhaji recipe..and trust me you are going to love it as its not all time consuming. It would be ready in just 30 minutes...yes exactly half hour and done. With just a little bit of prep and cooking you'll be relishing this in no time....so let's get to the ingredients list and quick recipe. PREP TIME: 15 Mins COOK TIME:- 15 Mins SERVES:3-4 Ingredients:- 1 Cup finely chopped onions 1 Cup finely chopped green bell pepper 1.5 Cup finely chopped tomato 12 oz Paneer cube ( i used NANAK BRAND) 1/2 cup chopped coriander leaves 1 lime juice 1/3 cup butter 4-5 table spoon oil 1 cup water 2 Table Spoon PAV BHAJI MASALA 1 Tablespoon Red chili powder 1 Teaspoon Coriander-Cumin Powder 1/4 Teaspoon Turmeric Powder 1/4 Teaspoon Garam Masala 1 Teaspoon Kitchen king masala (optional) 1 Teaspoon each green chili paste 1 Teaspoon Ginger garlic paste Salt to taste NOTE- Don't be afraid of putting the spices the paneer will soak up all the heat. *Take the paneer and cut it in half. Shred one half of the paneer and set aside. Chop the other half into very small tiny pieces. Heat 2-3 spoons oil in a pan and just saute the cubed paneer till golden brown set aside. *In a pan heat the butter and oil together. Add in the onions and chili and ginger garlic paste and saute till onions are translucent. * Add in the green pepper and salt. Saute till everything is little soft and mushy. Add in the tomatoes and saute for another 2-3 mins till tomatoes are soft and mushy. * Add in all the dry spices and shredded paneer and mix well. Cook till all spices are mixed well and you see the oil and butter oozing from the side. * Add in about a cup of water and let everything cook together and then add in the chopped shallow fried paneer pieces. Mix well and mash the gravy with a potato masher. Cook till it becomes the gravy becomes thick pav bhaji like consistency. Add in the lemon juice and taste test for salt. * Feel free to add in more spices listed above to your liking. Finish off with adding the chopped coriander. Serve with toasted Pav or parathas and lots of finely chopped onions and lemon. Enjoy.
