Chili Toast Grilled Cheese

This is my favorite comfort snack to have at odd hours when you are craving for that something with an extra kick... I am always in for snacks that I can make quickly and easily and even better if it doesn't come from a packet. It has lots and lots of flavor and spice as it's a crossover between my two favorites GRILLED CHEESE & CHEESE CHILI TOAST.


You know what's a secret to a good grilled cheese.....it's the BREAD that you use. Imagine how those gourmet grilled cheese tastes and why do they taste so great....cuz of the bread it's made with. Normally, I would use a good sourdough bread to make my simple grilled cheese but since this has that Indian flavor profile I used the FARMHOUSE HEARTY WHITE bread from PEPPERIDGE FARMS. It's perfect as it has the exact thickness and it works great with the spices and chutneys that I put in it which gives it that extra kick you are looking for.


Normally Green Chutney, Red Garlic Chutney & Date Tamarind Chutney are used accordingly with different types of Indian snacks and savory dishes. So almost every one would have a similar recipe for it but here is how its been made in my household for years. I will do a separate post for all the three chutneys in sometime. But for now just follow the below recipes that I have jolted down.


It's very easy to make and it's pretty simple as well, also almost every Indian Household would have these ingredients in their fridge and pantry so you can jump onto making these if you have everything listed below.. And for those of you who wouldn't here is a list of ingredients and recipe to follow to make these cheesyyyyyyyyyyyy yumminesss...





 

PREP TIME:- 15 MINS COOK TIME:- 15 MINS SERVES:-Makes 3-4 Sandwiches.

 

Green Chutney (as needed)

Tomato Garlic Chutney (as needed)

1 cup Mozzarella Cheese shredded

1/2 cup white cheddar cheese shredded

Velvetta Yellow Cheese Slices (as needed)

2 Medium green chilies diced fine

1/2 Jalapeno de seeded & chopped fine

1 Medium onion finely diced

6-7 Mint leaves Finely chopped

1/2 cup roasted corn kernels (i used frozen ones from Trader Joes- just Microwave for a minute)

1 Teaspoon Red chili flakes

1.5 Teaspoon Chaat Masala

1/4 Teaspoon Garlic Powder

1/4 Teaspoon Italian Seasoning


Green Chutney (process)


1 Bunch Cilantro (washed & cut 2 inches from bottom)

3-4 Small Green chilies

3-4 garlic cloves

2 inch piece ginger

1 teaspoon each black salt, cumin powder & chaat masala

1-2 table spoon skinless peanuts


*Put Everything in a blender and add half cup water and grind it into fine paste.


Garlic Chutney (process)


10-12 Dry Red Chilies (soaked in hot water for 3-4 hours)

5-6 cloves garlic

1/2 Large Tomato

1/2 Teaspoon Cumin powder

1/2 Teaspoon Salt

1/4 Teaspoon Paprika (optional if you want more red color)

1 -2 Table spoon Oil (I use Canola)


*Remove the softened red chilies from water and add it in a blender, put everything else in and add little water from the soaked chilies if required and grind it into fine paste.



For the Sandwich Making Process:- *In a bowl add finely chopped onions, green chilies, jalapeno,corn, mint leaves, mozzarella & cheddar cheese shredded. Mix well with a light hand. *Add the dry spices and mix well again. Keep aside. *Take 2 bread slices and apply 1 teaspoon of green chutney on one bread and 1 teaspoon red garlic chutney on the other. *Take the Cheese mixture and add a generous amount on the side with the green chutney. *Take 2 Velvetta Cheese Slices and add in on the garlic Chutney lathered bread. Place on top of the other bread with the cheese mixture. *Take a non stick pan and let it heat up. Add 2-3 Spoons of canola oil and place the sandwich and applying gentle pressure let the bread get crisp and golden brown. Flip a couple of time between both sides so the bread doesn't burn till cheeses are nicely melted. Serve with Ketchup.
