Mexican Aloo Tikki Burgers

Are you tired of eating the same old veggie patties and bean burgers??? If the answer is yes than you have landed on the right post. Trust me when I say this I was too bored of eating the same kind of BURGERS now that I have almost turned into a vegetarian. I was in the mood for some FUSION of INDIAN and MEXICAN flavors combined into one and something I can call my own signature recipe.


So the idea behind creating this MEXICAN ALOO TIKKI BURGERS came to me as I was missing some ALOO TIKKI BURGERS from MCDONALDS INDIA. I know your mouths are already drooling with me just taking the name. You all will agree that Mcdonalds India is a vegetarians paradise for yummy burgers and fries and their sauces are to die for. Since its hard to make travel plans this year to our home country, I am bringing you this recipe which is so close to the amazing Aloo Tikki Burgers from them and you are going to LOVEEEE IT !!


So much so that you'll be making these for yourselves, family and friends from now on and get tons and tons of compliments. I have combined the good ole ALOO TIKKI with some fantastic MEXICAN FLAVORS and also complimented it with TWO different sauces to go with. CHIPOTLE MAYO & CILANTRO MAYO which you can even use for your sandwiches, burritos, quesadillas and even with some ALOO TIKKIS or more. So without wasting further time describing it I am jolting down the list of ingredients and the recipe down below. PREP TIME: 60 MINS COOK TIME: 45 MINS SERVING: Makes 15-18 Patty


Ingredients for CHIPOTLE MAYO & CORIANDER MAYO


1/2 small can Chipotle Adobo Peppers (LA COSTENA is the brand I use)

1 1/2 cup Mayonaisse


* Add both in a blender and turn it into a smooth fine paste like consistency. You don't need water as the adobo sauce will do just the right trick. You can add chipotle peppers and the adobo sauce from the can little by little to adjust it to your taste.


Now for CILANTRO Mayo:


1 bunch Cilantro (washed and dried)

1 Large Clove Garlic

1 cup Mayo

3-4 TBSP Sour Cream

1 Jalapeno

1/4 Teaspoon Cumin Powder


*Blend everything into a smooth fine paste like consistency. Again you won't need water but add like 2-3 TBSP for blending if its getting too stuck. *BOTH SAUCES should be thick and paste like in consistency for easier spread just like a chutney.



For ALOO TIKKI PATTY:


6-7 Medium Potatoes Boiled & Mashed (cool down to room temp) 1 15.5 OZ Can Black Beans Washed & Drained (mash with fork till its little chunky) 1 cup Roasted Corn kernels ( I used the ones from Trader Joes)

1/2 piece Ginger, 4-5 Garlic Cloves, 1 Serrano chili (make it into smooth paste) 2 Cups finely chopped Red onion & Red Bell Peppers

4-5 Tablespoon Taco Seasoning

1 Teaspoon Smoked Paprika

1 Teaspoon Cumin Powder

1 Teaspoon Sea Salt

6 Tablespoon CORN STARCH

Suji (semolina) for Coating the patty

Oil for Shallow Frying


*Combine all the above ingredients in a large mixing bowl nicely and make it into patty of your liking. I use a golf ball sized mixture and made a patty.


*Heat a large nonstick pan and add in some oil and let it heat up. Coat each patty nicely in some SUJI (semolina) and then place it on the pan and shallow fry till all sides are nicely dark browned. Let the patty come to room temp before assembling the burgers. SLIDE FOR PICS



For ASSEMBLING the Burgers:


*Take the burgers buns of your choice and roast them on a pan with some oil till they are little crispy. Chop some red onions, tomatoes and jalapenos into round slices.


*Take the lower part of the burger bun and apply the chipotle mayo to your liking and then add the patty on top. Add the onion, tomato and jalapeno slices on top and apply Cilantro Mayo on top part of the burger bun. Add the top part of the bun to the rest of the burger and serve with some fries or salad of your choice. SLIDE BELOW FOR PICS.
