Toasted Bombay Sandwich

The origin of this iconic street food called BOMBAY SANDWICH happened in India's most famous Bollywood city- Bombay now known as Mumbai. Flavored Mash potatoes, some veggies, cheese and spicy chutney put together between two generously buttered white bread....just yummmyyy. It's the most easiest snack anyone can put together in no time and its just perfect for anytime of the day. Almost every Indian food blogger has their version of this treat which is a wholesome meal in the form of a snack, so how can I be left behind.


Now there are several different ways to make this sandwich today I am sharing the way I like it the most. You can even make the potato mash in advance it stays good for 3-4 days in the fridge so you can save time when you make this sandwich. So here are the quick steps to make it and some mouth watering pics to give you an initiative to try it out. So quickly dice up all the ingredients and spice it up with some yummy chutneys, slather it up with that butter and enjoy it.




PREP TIME- 25 MINS COOK TIME- 15 MINS SERVES -2

TBSP= Table spoon TSP= Teaspoon


FOR MASALA POTATO MASH (ALOO MASALA)


3 Potatoes boiled & mashed

1/2 cup chopped cilantro

1 TBSP crushed green chillies (add less for less spice)

1 TSP Cumin seeds (jeera seeds)

1 TSP Mustard Seeds (rai)

1/4 TSP Asafoetida (hing)

2-3 TBSP Green Peas (boiled)

1 TSP Lemon juice

1/4 TSP Turmeric Powder (haldi)

Few TSP Oil

Salt to taste




REST OF THE INGREDIENTS


6 Slices White Sandwich Bread (I use Brick oven large)

1 CUP EACH THINLY SLICED- Onion, Cucumbers, Tomatoes & Beetroot

(boil the beetroot or use it raw upto you)

Amul Cheese Slices (optional)

5 TBSP Mayo mixed with 1 TSP Garlic Chutney

1/2 cup Green Coriander Mint Chutney

Butter as required

Grill Pan or Regular Pan

Sandwich Masala or Chaat masala


If you don't have green chutney here is how you make it- Or use readymade

1 bunch cilantro (washed and cleaned)

3-4 Green chilies (add less for less spice)

3-4 cloves garlic

1 TBSP Raw peanuts

1 TSP EACH Cumin powder, Salt and Chaat Masala

1/2 inch piece ginger

*throw everything in a blender add little water and blend it to smooth fine paste.


* First make potato mash- In a pan heat some oil and add in the mustard & cumin seeds. Let it crackle. Add the hing and green chilies. Saute for a minute or 2. Add in the haldi, mash potato, salt and chopped coriander. Mix well and taste test, adjust salt level to your taste. Add in the lemon juice. Mix well. Heat the mixture and turn off gas. Take it out in a bowl set aside.


* Take the veggies and slice it very finely.


* To assemble-


Take 2 slices of bread, apply green chutney on one and garlic mayo on other.


Layer the potato mash & cheese slice (optional) on the bread with green chutney and add another plain slice of buttered bread on top.


Add the sliced veggies to your liking, sprinkle generously some sandwich masala or chaat masala and add the garlic mayo applied bread slice on top.


Apply generous amount of butter on both sides of bread and grill it on a grill pan or regular pan till top and bottom is nicely golden brown.


Remove from pan and let it cool down a bit. Slice it across in half and serve with Ketchup, side of green chutney and some potato chips. SLIDE BELOW FOR PICS
